Cherry Chipotle BBQ Chicken Thighs


Ok that is serious yumminess right there!

I try to stretch food as much as possible and a while back I saw this tip from the Brothers Green. They took chicken thighs and cut most of the meat off to use for one meal but left a decent amount on the thigh bone to use in a different meal. That’s what I did here. I cut the big section of meat off and made nuggets for my son’s lunch and used the meat on the bone for these delicious Cherry Chipotle BBQ chicken thighs. 

I like simple food. But I also like tasty food. These meet both criteria. 

I simply cooked the chicken in a tiny bit of olive oil first. I actually cooked the nuggets and the thigh bone drummies (yep, that’s what I’m calling them) together. Of course the nuggets cook faster so I took those out when they were done and continued cooking the thigh bone drummies until they were cooked through. Then I wiped out the pan of any oil or fat that may have released from the chicken. (I used one of those Copper Chef pans for super easy clean-up.)

So now my chicken thigh drummies are cooked and in the pan. Here comes the really hard part! I poured Fitz’s Cherry Chipotle BBQ Sauce over each piece, flipped and poured a bit more on. Then let the sauce thicken while flipping and coating the chicken thigh drummies. That’s it! It probably took longer to type this out than to make these! 

A couple things I want to mention.
1) I get my chicken from a local farm, Fresh Pasture Farms, so these chicken thighs were big!
2) Fitz's is a restaurant in St. Louis that makes and bottles their own sodas right there in the restaurant! You can watch them bottle while you have your meal. It’s pretty cool! They also make this Cherry Chipotle BBQ Sauce that I used plus they make a Rootbeer BBQ Sauce as well. They use their Black Cherry Soda in the Cherry Chipotle and their Rootbeer in the Rootbeer BBQ Sauce. Both are excellent!
3) This would be an awesome way to cook chicken wings too!

Pico de gallo is so easy to make, so I wonder why don't I make it more often??

I only made enough for 1 burrito today because I like it fresh and I don't like to waste anything. So, here goes. 


Pico de Gallo

1 small tomato (chopped) from my garden
1 small onion (chopped) from my garden
1 small jalapeño (seeded and chopped)from my garden
1 good squeeze from half a lime
If I had cilantro, I would have added that too but I didn't.
You could add salt too, but I didn't. Sometimes I do though. 


Then just stir it up!

That's it! Super EASY!!

You can use it with anything. I put it in my steak burrito today, but you could put it on fish or in a salad or on some pasta maybe. Just be creative. Probably not good on ice cream though! HaHa!

3 Ingredient Breakfast Cookie

The other day I saw this recipe on Tasty and I shared it on my Facebook page. Well this morning I decided to make them and WOW! They are GOOD! My kids liked them too! It is called a 3 ingredient Breakfast Cookie. So simple and QUICK!

2 Bananas
1 cup Oatmeal (uncooked)
A Mix In. I used about a 1/4 cup of Dark Chocolate Chips, but you could use nuts, raisins, peanut butter, whatever you want really.
Mix Bananas and Oatmeal with a fork then add your Mix In. Bake at 350 for 12 minutes. Makes 12 cookies. Serving size 3 cookies. 


Note: I dropped them on parchment paper on a cookie sheet like you would do with drop cookies. I expected them to spread and flatten the way a drop cookie would, but they didn't. So next time I will flatten and form them before I bake. 



If you are doing the container system (ie: 21 Day Fix), 3 cookies is 1 Purple, 1/2 Yellow, and either 1 Blue, 1 Orange, or 1 teaspoon depending on your Mix In.

HEY THERE!! It's February 1st. Can you believe it? A month gone by already. So, let me ask you, how are your New Year's Resolutions going? You know the ones that you will exercise and eat better and quit drinking soda. Yeah, those resolutions. Are you finding it difficult to find the time to exercise? Don't know what exactly to eat? Well, I've got great news for you!! I am hosting a private Online Challenge Group starting February 13. Do you wish that you had the time to do all of the things you want to do? Do you wish that you still had the energy to do all those things?

One of my favorite things to do is to go adventuring. Whether it is hiking or camping or canoeing, I love being out in nature. When I was younger, if you called to go on an adventure, I'd say give me 30 minutes and I'd be packed and ready to go whether it was for a day or for 3 weeks. Then we just stopped going all the time. Partly because we were always working and partly because we were tired because we were always working. Life became sedentary. Sure we still went on the occasional hike or camping trip, but not like we used to. Because the activity slowed, I started gaining weight. I was always thin so a little weight wasn't a bad thing, at first. But then it started affecting my health. I wasn't getting younger either. I had a few very scary health related things that told me I had to do something. But my real wake up call was in the summer of 2014 when the left side of my face went numb. Thank goodness it was just Bells Palsy (which is usually caused by stress) and not a stroke. I needed to get healthy.

I tried by myself to eat better and exercise, but I didn't seem to make any progress. Then I found Beachbody and it changed my life. I knew in the first few weeks of starting my program that I wanted to be a Coach and make this my life. I not only get to make my own life healthier, but I also get to help others learn to live healthier. Plus I earn money in the process that I can use to help fund my adventures. I can help you too! I can walk you through STEP BY STEP the same process that I use. If you love to help others and want to live a healthier lifestyle, being a Beachbody Coach may just be for you!

I turned 50 a few months ago. I've had a dream for many, many years of hiking the Ozark Trail. A few years ago I almost gave up that dream because of my health. Now, I plan to make that accomplishment in the next 10 years.

Southwest Shredded Chicken

You can use this recipe anywhere you would use shredded chicken such as Tacos, Burritos, Quesadillas, Salads, or whatever.

Ingredients
Chicken Breasts (I used 2)
Taco Seasoning (I make my own and used 2 Tablespoons but you could use a packet.)
Salsa, 16 oz. (I used 2 Men and a Garden but use your favorite.)
Juice of 2 Limes
Cilantro ( I used about 1/4 cup, but use it to your tastes.)

Put Chicken in the bottom of the crockpot. Add ingredients on top of chicken in order. Cook for 6 hours on low. (Cook longer if you use more than 2 Chicken Breasts.) Shred chicken with 2 forks. Use in Tacos, Burritos, Quesadillas, Salads, or whatever. Top with your favorite toppings. Enjoy!
